Wine-making doesn’t get much more raw than this - a rudimentary shed on a hill surrounded by vineyards and grape crates. This tiny hands-on operation was set up by a group of grape-farmers, originally for their own consumption. They make just two types, Koshu and Muscat Bailey A, sold mostly in isshobin, the 1.8-litre sake bottles that local farmer typically buy their wine in.
